Have you ever had purple potatoes? I had them for the first time last week and I absolutely loved them. Purple potatoes are slightly healthier than white potatoes. According to Daily Health Post purple potatoes contain 4 times as much antioxidants as white potatoes. (one more reason to eat this), the more colorful varieties also contain pigments called carotenoids and flavonoids that may protect you from cancer. Also, they are delicious and taste almost exactly the same as white potatoes.
I personally love potatoes, specifically fried ones. Unfortunately, fried potatoes contain too much oil and salt, which are not healthy, and not recommended. To satisfy my cravings for fried potatoes, I baked my potatoes.
Here is a simple recipe:
- 2-3 medium sized purple potatoes
- Dry dill
- Onion Powder
- 1 Tbs olive oil
Cut your potatoes and mix all the ingredients together and let it bake 15 -20 mins at 400 F
- High in potassium (potassium regulates blood sugar).
- Extra antioxidants compare to white potatoes (antioxidants help strengthen the immune system and help prevent certain heat diseases and cancers).
