Potato Beet Salad

Today’s recipe is very simple, delicious yet very healthy.  Potato Beet salad that is very similar to vinegret or vinaigrette which is a Russian dish that is also popular in other post-Soviet countries. It consists of yummy colorful, cooked vegetables. This is of the ways I usually make my salad. This amazing salad is plant-based and super healthy. The taste depends directly on the amount of its ingredients. From this amount of ingredients, 6-8 servings are obtained.


  • 4 medium sized beets or 400 gr of beets
  • 2 carrots or 300 gr carrots
  • 3 medium sized potatoes or 400 g of potatoes (I used Trader Joe’s baby potatoes but you don’t have to)
  • 2 Tbs of extra virgin olive oil


  1. Boil beets in one pot until cooked
  2. Boil your potatoes and Carrots in a different pot
  3. Boil green beans or use canned beans, I personally bought raw green beans from Trader Joe’s but you don’t have to. Whatever is more convenient for you.
  4. Cut your carrots, potatoes into cubes
  5. Lastly cut beets into cubes
  6. Add salt, 1/3 of fresh lemon juice
  7. 2 Tbs of extra virgin olive oil
  8. Mix all together and ta-daaa it is ready! Enjoy!

*Tips: You can also add 200 grams of sauerkraut and 200 g of pickled or fresh cucumbers. It will be more delicious.
